PEAR AND HAZELNUT SALAD WITH CHAMPAGNE VINAIGRETTE

Serves 4 servings
Ingredients
  • 2 tablespoons Champagne vinegar
  • 1 teaspoon Dijon mustard
  • Sea salt and freshly ground black pepper
  • 1/4 cup olive oil
  • 2 cups mixed salad greens or mesclun
  • 1 ripe pear, cored and thinly sliced
  • 1/2 cup roasted hazelnuts, coarsely chopped
  • 2 ounces Cambozola or other blue-veined cheese, crumbled
  • 2 ounces aged Gruyère, shaved into thin strips
  • 1/4 cup candied pecans or walnuts
Method
1

To make the vinaigrette: In a medium bowl, whisk together the Champagne vinegar, mustard, and salt and pepper to taste. While whisking, slowly drizzle in the olive oil until the mixture is well combined and slightly thickened.

2

In a large bowl, combine the mixed greens, pear slices, roasted hazelnuts, and crumbled Cambozola. Toss gently with the vinaigrette, and divide onto four plates.

3

Top each salad with shaved Gruyère and candied pecans. Sprinkle with hazelnuts and serve immediately.

Notes: More vinegar can be used in place of Champagne vinegar in the recipe.
